I'll discuss the treatment of high energy interactions of hadrons and nuclei, in relation to experimental studies of ultra-high energy cosmic rays (UHECRs). I'll start with the general physics approaches of present day Monte Carlo (MC) generators and describe in some more detail the QGSJET-II MC model. Further, I'll demonstrate which features of high energy interactions have a strongest impact on predicted characteristics of cosmic ray induced extensive air showers (EAS) - nuclear-electromagnetic cascades in the atmosphere. Finally, I'll address the problem of a self-consistent interpretation of experimental data of the Pierre Auger observatory and outline the respective consequences for the nuclear composition of UHECRs.
