Understanding the acceleration of particles up to the extreme energies of PeV is one of the major cornerstones of the cosmic ray field, since their discovery hundred years ago. How and where these cosmic rays -electrons and protons- are accelerated are subject of lively discussions and represents one of the hot topics in gamma-ray astrophysics. The recent detection by LHAASO of several sources reaching PeV energies, or PeVatrons, have provided important new clues to the puzzle, to add to the observations in the very high energy regime. In this Workshop, we aim to discuss the latest results on PeVatrons from very-high and ultra-high energy instruments, their implications for the current theories, and prospects for future observatories.
